Tomato Coconut Chutney


If you are bored of regular coconut chutney, this recipe is for you! It is easy & quick to prepare, yet tastes yum!! The tempting red color of the chutney is due to the tomatoes and the red chillies in it. This tomato coconut chutney has contrasting flavors of sweetness from coconut, a mild tartness from tomatoes, and real hot with the red chillies. This goes well with steaming hot idlis and dosas, and many other breakfast recipes as does the coconut chutney.


Ingredients
1 cup chopped fresh coconut
2 medium tomatoes, chopped
1 tbsp chana dal
1 tsp cumin seeds
1/2 tsp urad dal
1 spring curry leaves
4 red chillies
2 garlic cloves, roughly chopped
1 tsp oil
salt to taste

Method
  • Heat oil in a pan, add garlic and fry for a minute. Now add cumin seeds, chana dal. urad dal, red chillies, curry leaves and saute till chana dal is lightly browned.
  • Now add chopped tomatoes and saute on medium-high flame for 2 min and cook covered for another 2 minutes or until the tomatoes are cooked thoroughly. 
  • Let the mixture come to the room temperature.
  • Add the mixture,coconut, salt and sufficient water to the blender and grind to a smooth paste.
  • Check the seasoning and adjust the consistency (by adding water if required).
  • Serve with idli or dosa.
