Eggless Tiramisu


Tiramisu is an Italian word, which means 'Pick me up'. True to its name, this desert is worth to pick up. This is a desert for all the coffee lovers. It is basically an Italian trifle made using savoiardi/ladyfingers (Italian biscuits), coffee, mascarpone, whipped cream, zabaione ( a custard made of egg yolks, sugar and marsala wine).

I had deviated from the actual Italian recipe and avoided zabaione which made my recipe alcohol and egg free.


Ingredients
1 cup mascarpone cheese
1/2 cup heavy cream
1/3 cup sugar (adjust to taste)
1/2 tsp vanilla
1 cup strong coffee, cooled 
15-20 ladyfingers
Chocolate shavings or unsweetened cocoa powder for garnish

Method
  • Whip heavy cream and set in the refrigerator.
  • Combine coffee, 1 tbsp sugar and set aside.
  • In another bowl, cream together mascarpone, sugar and vanilla. Fold in the whipped cream gently.
  • To assemble, dip each ladyfinger into the coffee mixture and lay in the bottom of the pan.
  • Once the bottom of the pan is filled with the ladyfingers, pour over half of the mascarpone and cream mixture. Spread evenly over ladyfingers and sprinkle the top with cocoa powder.
  • Repeat the process once more, cover and chill for for atleast 4 hours (overnight preferred for better setting).
Note: I used espresso, but can be replaced using 2 tsp of instant coffee powder and 1 cup water.
Tiramisu can be layered in one large bowl or can be served individually in cups or glasses.
