Aah.. these are one of my childhood favorite snacks and a famous snack item from Andhra. I still remember asking my mum to make these crunchy shells. These used to be my preferred school-time snack.
Ingredients
1 cup whole wheat floor
1/2 cup semolina (sooji)
1 tsp rice flour
2 tbsp clarified butter (ghee)
1 cup sugar
a pinch of salt
oil for deep frying
water as required
Method
- In a large bowl add wheat floor, semolina, rice floor, sugar, salt and mix well.
- Add heated clarified butter and mix until you get a crumbly texture.
- Add water little by little to make a medium hard dough (not too hard or too soft)
- Divide the dough into equal sized balls.
- Roll the balls into small discs.
- Press the discs on a steel spatula to get the shape and fold to form a tube/shell shape.
- Continue with remaining discs.
- Deep fry the shells on medium heat until they turn golden brown.
- Store in an air tight container after they come to room temperature.
- Enjoy as a tea time snack.
