Cherry Cake Brownies

Cherry Cake Brownies
Streets and parks are blushing with cherry blossoms now in Milan. This is the season for most people like me who would want to enjoy the beauty of nature. Cherry blossoms are usually in light pink and white in color.

So, what better way to celebrate this season than making some brownies filled with cherries. 

Ingredients
1/2 cup melted unsalted butter
1/3 cup oil 
1 cup white sugar
2/3 cup honey
1 tsp vanilla extract

1/2 tsp instant coffee powder
4 eggs
2/3 cup unsweetened  cocoa powder
1 cup all purpose flour
1/2 tsp baking powder
A pinch of salt

1 cup chopped fresh cherries
2 tbsp warm water

Method
  • Preheat oven to 175 degrees. Grease a baking pan.
  • In a bowl combine flour, cocoa powder, salt, baking powder.
  • Add coffee powder in the warm water and mix well.
  • Add 2 tsp flour over chopped cherries and combine well.
  • In another bowl, mix together the butter, oil, sugar, honey and vanilla. 
  • Beat in eggs one at a time. Combine the dry ingredients into the egg mixture until well blended. Stir in cherries. 
  • Pour the batter evenly into the prepared pan. Bake for 35-40 minutes, or until the brownie begins to pull away from edges of pan. 
  • Let cool on a wire rack before cutting into squares.
