Many of us these days are aware that most recipes made of
all purpose flour involve ingredients that are bound to contain excess calories
and lead to putting up those extra pounds, which does more harm than good. But
not many of us can resist from having large bites of them. When you really
cannot resist the urge, here is a safer bet. Sugar-less, butter-less, dates cake……yes, believe in your
vision, you are reading it right J
Ingredients
¾ cup whole wheat flour
¾ cup all purpose flour
1 cup chopped dates
1/3 cup + 2 tbsp honey
¾ cup milk
2 tbsp oil
2 eggs
1 tsp vanilla essence
½ tsp lemon zest
½ tsp cinnamon powder
¼ tsp nutmeg powder
1/8 tsp ground cloves
1 ½ tsp baking powder
1/8 tsp salt
1/3 cup nuts
Method
¾ cup all purpose flour
1 cup chopped dates
1/3 cup + 2 tbsp honey
¾ cup milk
2 tbsp oil
2 eggs
1 tsp vanilla essence
½ tsp lemon zest
½ tsp cinnamon powder
¼ tsp nutmeg powder
1/8 tsp ground cloves
1 ½ tsp baking powder
1/8 tsp salt
1/3 cup nuts
Method
- Preheat the oven at 180 deg. Prepare a cake pan and set aside.
- Add milk, oil, eggs, honey, vanilla essence in a mixing bowl and beat until well combined.
- Add 2 tbsp of flour in the nuts and mix until well coated.
- Mix all the dry ingredients and add to the wet mixture. Mix until just combine.
- Now, add in the nuts and just fold in everything together (do not over mix).
- Pour the batter into the prepared pan, smoothing the top with the back of a spoon.
- Bake for about 55-60 minutes or until a toothpick inserted in the center comes out clean. Place on a wire rack to cool for about 15 minutes, and then gently remove the cake from the pan.
