Foxtail millet is the second-most
widely planted species of millet. In South India, it has been a staple
diet among people since ancient times. Foxtail millets are ideal for reducing cholesterol, controlling blood sugar, and
aiding metabolism rate. High in anti-oxidants, this wonder food helps in
getting rid of toxins in the body. These are also high in dietary fiber, which aids in proper breakdown of food
assisting in better digestion. These are free of gluten, unlike rice and wheat.
In addition, it helps in keeping the glycemic index (the rate at which blood
sugar level spikes up after eating) low. Therefore, these millets maintain a
balance in the body.
½ cup foxtail millets / korralu
3 cups milk
2 tbsp sugar
½ tin condensed milk
¾ cup grated fresh coconut
3 cardamom, powdered

Method
- Rinse millets and soak for 10 minutes in 1 ¼ cup water
- Pressure cook millets along with the water for 3 whistles
- Let the pressure release by itself
- Add milk, coconut, and combine everything well and let it cook on medium flame for 10 minutes (keep stirring in between)
- Now add condensed milk, sugar, cardamom powder, mix well and let it simmer for 5 minutes
- Set the consistency, add nuts, combine everything well and switch off the flame
- Serve hot, warm or cold
