No Butter, No Sugar, No Egg – Banana Bread

‘No Butter, No Sugar, No Egg – Banana Bread’….sounds weird until you tried and tasted it to be yumptious? These days a lot of people want to cut-out on sugar and butter to lose weight. There are others who give-up on eggs as they are strictly vegetarians OR as a practice of vegan diet.


Whenever I had some over-ripe bananas on my counter, I made different loafs. This time around I sincerely wanted to make something really healthy yet tasty. After giving some thought, this recipe ‘No Butter, No Sugar, No Egg – Banana Bread’ had come out. I have made some delicate substitutions of butter with olive oil, sugar with honey, egg with flax meal and all purpose flour with whole wheat flour. My experiment of making something new, healthy, and tasty succeeded once again.


People like me who have a sweet-tooth, but are weight-watchers….this one is for you.


Ingredients:
1 ½ cup whole wheat flour / atta
3 large bananas
¼ cup + 2tbsp olive oil
½ cup + 2tbsp honey
2 tbsp flax meal (mixed in 5 tbsp water)
1 ½ tsp baking powder
¼ tsp salt
½ tsp cinnamon powder
½ tsp vanilla extract
½ cup chopped walnuts

Method:
  • Egg replacement: Mix 2 tbsp ground flax seeds to 5 tbsp water and mix well. Place in refrigerator for 15 minutes. It forms to a thick egg like consistency. This mixture can be used in place of 2 eggs.
  • Preheat the oven at 180 C or 350 F
  • In a bowl, combine whole wheat flour, baking powder, cinnamon powder, salt and chopped walnuts (reserve few walnuts for sprinkling oven the loaf)
  • Mash the bananas and set aside
  • In large bowl, whisk olive oil, honey until combined
  • Add mashed banana, vanilla and whisk everything well.
  • Now add the dry ingredients and fold until just combined. Do not over mix.
  • Pour the batter in a prepared pan and bake for 50-55 minutes or until a toothpick inserted in the middle comes out clean.
