Banana Coffee Loaf


Whenever hubby gets bananas, I just wait for them to over-ripe. You know why? Yeah, this is the secret to bring out the best banana loaf. The more they ripen the sweeter (natural) and better is the cake. On the day of baking this loaf, your house gets so aromatic that you feel as if you are in a fancy bakery.

This super moist loaf which is packed with banana flavor is easy to assemble, quick-to-whip-in the ingredients, which are easily available in your kitchen pantry. Moreover, you are going to use the bananas (over-ripened) which you may not like to eat. You may throw in some of your favorite nuts / chocolate chips to add a delicious crunch. It cannot get easier or tastier than this J


These loaves can be frozen, and tastes equally well when reheated. So, you can easily dare to make an extra batch and store in fridge. You readily have a sweet treat any time of the day. It goes excellently well as breakfast or as tea time snack.

Next time, you will definitely not throw away the over-ripe bananas which turned dark, instead make this delicious Banana Cake, which I am sure will be a favorite for kids and adults alike.

Ingredients
1 cup whole wheat flour
1 cup all purpose flour
1 cup unsalted butter
½ cup brown sugar
½ cup sugar
1/3 cup milk
3 medium banana
1 tsp vanilla essence
2 tsp coffee concoction (or 1 tsp instant coffee with 2 tsp warm water)
a pinch salt
1 tsp baking powder
2 eggs
¼ cup almonds, chopped
¼ cup chocolate chips

Method
  • Preheat the oven at 180 deg. Grease a loaf pan and set aside.
  • Cream butter and sugar until fluffy.
  • Add eggs, and beat well until frothy.
  • Mash bananas in a separate bowl using a fork, add it to the egg mixture and combine well.
  • Beat in coffee and vanilla essence.
  • Sift together the flour, baking powder, salt.
  • Add 1 tbsp of flour mixture to the nuts, choco chips,and mix well. (This prevents nuts from sinking to the bottom)
  • Add the flour mixture to the wet mixture, and mix until just combined.
  • Now add the nuts, choco chips, and just fold in everything together. Do not over mix.
  • Pour the batter into the prepared pan, smoothing the top with the back of a spoon.
  • Bake about 40-50 minutes or until a toothpick inserted in the center comes out clean. Place on a wire rack to cool for about 15 minutes, and then gently remove the cake from the pan.
  • Serve immediately or keep it refrigerated.


Note :
I just tried adding coffee and it turned out well for me. If you like coffee, then give a try adding it. Otherwise just omit.
My pantry fell short of walnuts, so added almonds. You may add any of your favorite nuts. You can bring out your creativity here.
