No Bake Chocolate Cheesecake

Decadent chocolate cheescake is perfect for any occasion. Quick to make, simple and elegant to serve, this could become a favorite for your loved one.

Ingredients

½ cup melted semi sweet chocolate (little less than ½ cup)
½ cup cream cheese, softened
4 tsp sugar
big pinch of instant coffee
1 tsp milk

Chocolate shavings for garnish

For the base:

4 digestive biscuits / any chocolate cookie
1 tsp sugar
1 tsp butter, melted

Method

• Crush the biscuits to a coarse powder. Add sugar, melted butter and combine everything well.
• Spoon into serving dishes evenly. Press down with pestle (works really well) or any flat object and set aside. 
• In a bowl add the cream cheese, sugar, milk, instant coffee powder. Whisk everything well. Add the melted chocolate and beat in.
• Pour into the serving glass and sprinkle the top with the chocolate shavings. 
• Refrigerate overnight. (If you are like me and can’t resist, rest it at least 3 to 4 hours before digging in)
